Apple Spice Bundt Cake Recipe

Hi All. Chris’s resident food tester here, Alicia! While I enjoy eating all of the Chris’s awesome food, I like to do a bit of cooking and baking myself! This cake was made a handful of times over the past few months (particularly around apple picking season) and really stood out as a recipe worth saving.

After making it for the millionth time, Chris asked me to share with you this simple yummy cake. I first made this cake back in October for my Dad’s birthday, but it can be made for any occasion. While it works really well as a dessert, don’t be afraid to make this as a danish or for a brunch!

The original recipe didn’t call for the cinnamon chips, but if you can find them they make a great addition! The glaze should also be used with a heavy hand. It soaks into the cake and really adds a lot of sugary deliciousness.

Apple Spice Bundt Cake

Ingredients

Cake

2 eggs
2/3 C oil
1/3 C unsweetened applesauce
3/4 C white sugar
3/4 C brown sugar
1 tsp vanilla extract
2 C flour
2 tsp ground cinnamon
1/2 tsp each ground ginger & nutmeg
1 tsp baking soda
1/2 tsp salt
4 C peeled, cored & diced apples (measure after prepping – I used 4 apples)

Glaze

1 tsp ground cinnamon
2 1/2 C confectioner’s sugar
3 T milk
1 tsp vanilla extract

Directions

1 Preheat oven to 350 ºF. Grease and flour one Bundt pan.

2 In a medium bowl, whisk together flour, spices, baking soda and salt. Beat oil, applesauce and eggs with an electric whisk or mixer until creamy. Add sugar and vanilla, mix until uniform. Add flour mixture to wet mixture in batches, gently stirring to incorporate after each one. Fold in apples. Spread batter in prepared Bundt pan.

3 Bake for 35 minutes, or until a toothpick inserted comes out clean. Allow to cool in the pan 10 minutes, then invert onto a wire rack to cool completely.

4 For the glaze, whisk all ingredients together until smooth and shiny. Add additional sugar if mixture seems too runny, or a splash more milk if it gets too thick.

5 Place cake on wire rack over a large plate or tray to catch drippings, then slowly pour glaze over top. Allow to set completely, then transfer cake to a plate for serving.
