Avocados are not my all time favorite food. To me, the taste is just a bit too “meh” to deal with the odd texture.
I wish I liked avocados, I hear they have some amazing health benefits like lowering cholesterol and helping to protect your eyes… I’m sure that requires you to eat more than one avocado a year (which may still be an overistimate for me).
With that said, I won’t turn down a meal because it has some avocado in it (hello california rolls), which is why I jumped on board for making some avocado pineapple salsa last night. I figured any of the indifference I felt towards avocados would be canceled out by the deliciousness of the pineapple.
I was right.
If I was making this for just myself, I probably would include some cilantro… but since we live in a cilantro free household thanks to Alicia, that wasn’t even an option. I’m still a bit confused how some people have such a hatred for that delicious herb. I wish I could hide it in there without her knowing, but I’m pretty sure if I bought any she would smell it before it even got in the house.
In hindsight, I wish I used a bit more pineapple and tomato and went a little lighter on the avocado… but all in all, it had the flavor that I was looking for. I could have grabbed some chips and went to town on this if it wasn’t made for a purpose (hint: taco recipe incoming).
