Posting a side dish feels like cheating… but I can’t just keep posting different ways to cook a chicken breast. I think my posts are around 33% chicken based… so much for my attempts at keeping an even distribution. I just have a hard time buying a pound of shrimp when it costs 4 (or more) times as much as a pound of chicken.
Maybe that way of thinking will put me at an advantage when our economy collapses and we have to go back to bartering goods and services with one another. I will have years of experience with chicken exchange rates, I will become some sort of Warren Buffet of the chicken stock market… but I’m sure we have at least a couple of years until that happens.
Speaking of expensive vegetables (and horrible segues), asparagus is not something you want to be buying this time of year (at least where I live); but I wanted to wrap something healthy in something unhealthy, asparagus and bacon was what popped into my head.
There isn’t too much to this one… after I soaked the asparagus in water and removed the stalk I lightly covered them in olive oil, salt, and pepper. I then wrapped them in clumps of five with a piece of bacon and threw it in the oven for 20 minutes @ 375ºF.
I’m not a huge fanatic when it comes to asparagus, but anything wrapped in bacon get’s bumped up at least one letter grade: B+ for these “veggies”.
As a side note, you may be seeing more appetizers and side dishes being posted. This was easy to cook and even easier to write about… and with my ever decreasing attention span, simplicity wins!
If you’re anything like me, asparagus is something that you can live without… not bad, but not great. Wrap it in bacon and it magically turns into the best tasting vegetable ever!

Preheat oven to 375ºF.
Lightly coat asparagus in olive oil, salt, and pepper. Wrap bunches of 5 or 6 together with a piece of bacon (or two).
Cook for 12 to 15 minutes, flip, then continue to cook another 5 to 8 minutes.
