I sadly can’t remember when the last time I had a salad was. Not that I’m a green hater, I just kind of forget that they can be a viable meal if done right.
My salad memories came back when I saw cheap london broil in the grocery store today. The steak salad is a quick, easy, and relatively healthy meal that is perfect for flank steaks or similar cheap cuts of meat.
I marinated the steak overnight with garlic, salt, soy sauce, ketchup, vegetable oil, black pepper, oregano, and balsamic vinegar. From what I hear, this is important for making these cheap steaks taste decent.
The first decision you have to make is whether you want to cook outside on the grill or inside in the oven… I’m lazy, so I stayed inside. I got the oven preheated and threw the steak in to broil for 5 minutes on each side.
I would have cut it down to 4 minutes on each side if I was cooking for myself, but Alicia hates seeing any form of pink or red in her meats.
While the steak is cooking get the salad going. I went for romaine, spinach, cucumbers, peppers, tomatoes, and feta cheese. Alicia made the balsamic dressing with balsamic vinegar, olive oil, and mustard.
Once the steak is done cooking let it sit for a few minutes so the juices can redistribute themselves (mine could have used some more sit time, but I was freakin hungry). Slice it thinly across the grain, add to salad, devour.
