I was trying to get more of a buffer between this post and my last buffalo chicken post… but I absolutely needed to post something.
When you mix a completely random work schedule (sometimes I work at 8am sometimes I work until 12pm), a somewhat time consuming side job (web design/development), the standard summertime social events (golf and water fun), and throw in a newly found desire to not be fat (running, biking, and gym)… you’re left with very little time to sit down and cook something worthy of taking a picture of.
I’ve at least finished my last web project, so that should free up enough time to cook some food.
I’m a huge fan of everything that goes into this dip. When you mix together cream cheese, ranch dressing, hot sauce, mozzarella cheese, and chicken you’re bound to get something that comes out nothing short of amazing.
This was a last minute effort at making something to take to a game night (which was severely lacking of actual games). After I realized how delicious this was going to be, I did not want to give it up… but fortunately for my waist-line, I committed to bringing this and had to share.
PS: These Santitas chips are equally as amazing… mostly because of the price. I am a supporter of any company that puts a non-removable price tag right on the product, that way those re-sellers can’t jack up the price on us!
Hopefully I have exhausted my buffalo chicken reserve. I need to start exploring other ways to cook a chicken… especially considering how much protein I need to ingest in the next few months (now that I’ve lost some weight, it’s time to gain some muscle).

Instructions
Preheat oven to 350ºF.
Mix cream cheese, ranch dressing, and hot sauce until smooth. Fold in shredded chicken then "pour" into baking dish and top with shredded cheese.
Bake for about 20 minutes or until cheese is bubbling and starting to brown.
To save yourself some unnecessary calories use low fat dressing, low fat mozzarella, and neufchatel cheese... you won't notice a difference in taste.
