Prepare yourselves, this meal is the definition of a cheat day.
With that disclaimer out of the way… I was thinking to myself, “What should I make for dinner on this disgustingly hot and humid day?” My mind immediately went to the stove and I stayed there. After a few minutes, I gave in and settled on macaroni and cheese.
Since macaroni and cheese is something I’ve never made before, I had to rely on the internet to provide me with a starting point. Between The Pioneer Woman and some other 5-star rated recipes scattered throughout the internets, I came up with a list of things to buy from the store.
Did I forget to mention that this was mac and cheese with a buffalo chicken twist? Here’s to hoping you aren’t sick of me including buffalo chicken in everything!
That extra cheddar on the top pushes it just over 1/2 pound of cheese. As I said, this is not a dish to eat on a diet… but hey, it’s Fast Food Friday so have at it!
I wanted to make sure that I had no leftovers, so I cut back and only made a half batch. Since I was kind of winging it, I think I may have made (and used) too much cheese sauce… but when it comes to mac and cheese, too much sauce is better than not enough!
I think I’m finally settling into a M/W/F posting routine and the next few posts will be of the healthy variety (since I feel guilty after devouring that cheese-fest).
