On the rare occasion that I purchase liquor I usually go for a nice cheap vodka. Not only does it mix well with essentially anything, but now I can make this pasta sauce with the leftovers.
Alright… I’m going to come clean. On a normal day my laziness kicks in and I either buy a jar of regular pasta sauce and turn it into vodka sauce or on extra lazy days… I just buy the pre-made jar of vodka sauce. Today I was bored and went for option 3: homemade. I was surprised how well it came out and will most definitely be making this again (even though it took considerably longer than the first two options).
This meal starts with BACON, the cornerstone of any good recipe. I cooked up the onion, bacon, and garlic thoroughly. I then added vodka and diced tomatoes and continued to cook until the vodka disappeared.
After that was done I added the crushed tomatoes, cream, salt and pepper and cooked it down to the thickness I was looking for. While this was cooking down I broiled the chicken in the oven (too cold for the grill) and cooked the penne. Oddly enough, they all finished up at about the same time.
Next time I’m bored (really really bored), I may consider making a huge batch of this and storing it for future pasta dishes… although, most likely I will just waste my time with StumbleUpon and YouTube.
Thick and creamy vodka sauce is perfect served with penne and chicken. Next time you’re making pasta, make your own sauce… it’s surprisingly easy.
