Pizza: the one food that I could eat every day and never grow sick of. There are just too many variations… and each one is just as delicious as the last.
I’m not sure how I went this long without posting a pizza recipe. It probably has something to do with the fact that I have no idea what kind of pizza I am making until it is physically IN the oven. On pizza night, leftovers determine the pizza type… and tonight the fridge graced me with some leftover chicken, a few slabs of bacon, and a bottle of fat free ranch.

I pre-bake my crusts for about 7 minutes as I hate a soggy pizza. So I stretched out the the dough onto my pizza stone and got that in the oven. While that was cooking I got to work prepping the toppings, chopped chicken, crunched up bacon, and shredded cheese.
CBR Pizza is free of red sauce… I usually opt for a plain garlic oil but have been known to add some ricotta and herbs as well (if they are in the fridge (they were not today)). After the garlic oil I sprinkle on some mozzarella cheese (not too much) and hefty servings of chicken and bacon.
Back in the oven it goes for about 15 minutes.
I took the pizza out before it was finished to add the fat free ranch dressing then returned it to the oven to finish up. Be hypnotized by the CBR swirl!
As for the dough, I have dabbled in making my own (which usually turned out quite well). But, ever since I became employed, free time is not as abundant as it once was, so I have just been buying it from the store.
I am fortunate though; my Walmart sells pizza dough from a local bakery (Mastroianni Bros) and it is quite good (and cheap).

Season chicken breasts on both sides with salt, pepper, and garlic powder. Cook chicken over medium-high heat until brown then flip and cook for another 7ish minutes or until no longer pink. Remove the chicken from heat and set aside.
Preheat the oven to 400ºF and adjust the rack to the lower third slot.
Transfer dough to a lightly greased baking pan (or pizza stone) and stretch into shape. Pre-bake the crust for 7 minutes then remove from oven.
While the dough is in the oven, chop the chicken into small chunks.
Brush the entire dough with the garlic oil. Sprinkle mozzarella cheese evenly over the top then add the chicken and bacon (spread evenly).
Put pizza back in the oven and continue to cook until crust is brown and cheese has melted (about 20 minutes).
With about 5 minutes left, remove the pizza from the oven and add ranch dressing. Return pizza to the oven to finish cooking.
