Today, while I was perusing a list of “Quick Desserts” on MSN, it occurred to me that I’ve never eaten a parfait before. Being a lover of fruit and frequent yougurt eater, I found this completely unacceptable and vowed to change my status by the end of the night.
It’s very easy to consider yourself a success when you set very achievable goals like the one above. Considering it was my day off work and the only things on my to-do list were 1) go the gym, 2) make a parfait and 3) eat a parfait… I would chalk this day up as a complete win.
The only real question at this point in time was, “How unhealthy should I make this dessert?” Even though it was Fast Food Friday, I decided to go (almost) full-out “healthy”. This means you’ll be finding a lot of greek yogurt, fresh fruit, and a small portion of granola scattered throughout.
It all begins with Alicia’s (TheWannabeFoodie) love affair with Chobani yogurt (and lots of it). I’ve only had Greek yogurt once before and it was the plain variation… not my cup of tea. Chobani’s Vanilla Chocolate Chunk on the other hand may have just turned me into a believer.
Fold that yogurt into a little bit of whipped cream (or don’t if you’re looking to save even more calories). Either way, you’re left with the foundation for your dessert.
Grab some glasses and start layering. Granola/Strawberries/Yogurt… repeat!
I had some strawberry preserves left so I heat that up quick to get it nice and gooey and chilled it back down so I could put it in the cup.
Can’t go wrong with mix of chocolate, strawberry, yogurt, and granola… and even though this dessert wasn’t the cheapest thing to make (they came out to be around $2.00 per serving), I’d say it was worth the markup to add a healthy dessert to my recipe list.
These parfaits seemed to be a hit with the family, but I ran out of acceptable glasses to fill up towards the end… so the last couple may have been placed into small Tupperware containers… fortunately when you’re devouring things in full force, the vessel isn’t a priority.
