I love McDonald’s breakfast, hell… I love all things breakfast. Unfortunately for me, I’m never hungry during the “breakfast hours” of my day… so I can go weeks without tasting a pancake or omelette.
I’ve been in the mood for a breakfast sandwich (or 2) lately, but since I’m never awake for McD’s breakfast… it’s up to me to make my own. Hell, I probably would make my own anyway, these things are easy to make and taste better than anything a 16 year old that doesn’t care about his job would give me.
I don’t know where this thing came from, but there was one in my kitchen (apparently they are called egg rings).
I preheat the pan, chopped up some spinach, mixed the spinach with 2 beaten eggs and poured it into this bad boy. I cooked it over a low heat so the bottom wouldn’t burn while the middle solidified. Once it was relatively set, I extracted the egg from the ring and flipped it over to cook the top quick… excuse the mess, this was sandwich #2.
Once the egg was cooked, I assembled the sandwich which consisted of ham, cheese, tomatoes, and hot sauce. Voila, a relatively healthy egg sandwich.

Preheat the pan with the egg ring over medium low. Spray both the pan and egg ring with cooking spray.
Chop up Spinach and beat with 2 eggs. Pour into the egg ring and wait for it to cook for what seems like forever (4 to 5 minutes).
Extract the egg from the ring using any means necessary, flip to cook top for 30 seconds or so.
Serve egg on toasted english muffin with salt, pepper, cheese, ham, and whatever else you want.
Eat sandwich, realize one isn't enough, then make a second.
