I’ve noticed I am severely lacking in the breakfast department… which makes sense because I just can’t bring myself to eat breakfast most days. Even if I was a breakfast lover, my brain doesn’t turn on until later in the day, so my cooking / photography skills would be even lower than they are currently (if that’s even possible). So, I’ll just have to make a point to start having more brinner!
I had this amazing breakfast sandwich all planned out (AKA: I found a recipe in some article on MSN earlier this week). It was basically just eggs on an english muffin with some assorted veggies and smoked salmon… and I was ecstatic to A) post a breakfast recipe and B) finally get to see what smoked salmon tastes like.
It turns out smoked salmon is absurdly expensive. I sat at that freakin counter for about 5 minutes trying to talk myself into grabbing the $8 bag of 4 ounces of smoked salmon… but the Poormet in me just could not do it!
So instead, you get a cheapened version with canadian bacon.
I chopped up some onions and peppers really small and sauteed them for about a minute. I then mixed up the eggs and added them to the pan stirring constantly until they started to set. After that it was just some tomato slicing, english muffin toasting, and sandwich assembly.
When it comes to breakfast, simplicity wins… and it doesn’t get any easier than this.
To anyone that had experienced any problems on the site in the last week, thanks for your patience. I screwed up my database upgrade and my backup was a bit corrupted so I had to manually restore a bunch of data from my local development site… an awfully tedious, time consuming process that still isn’t 100% finished.
