Did you guys hear the bad news? Apparently there is going to be an extreme bacon shortage next year (and with shortage comes massive price increases). I guess droughts destroy everything we love…
Although, I’m not sure if I will feel the full wrath of the bacon shortage since I’m a recent convert to turkey bacon. I can’t remember the last time I bought real bacon… Turkey bacon has become my new favorite breakfast ingredient, and since I’m always a fan of wrapping something with something else, turkey bacon also finds itself in a wide range of my dinners as well.
Oh look, I’m wrapping something in bacon…
Did I mention this recipe involves garlic?! Unfortunately for those that have to deal with my garlic breath, I am a huge fan and will find any excuse to overload a meal with garlic.
I wrapped the chicken with some turkey bacon (I did question whether it was acceptable to wrap a bird with another bird… but then I remembered the excellence of Turducken). The butter mixture was melted and then poured over the chicken.
You’re going to want to make this in a baking dish and not on a baking sheet like I did… in a moment of laziness I thought I could get away with not having to clean a dish (wrong). The butter sauce splattered all over the place and I quickly changed dishes.
I baked the chicken for about 40 minutes, turning halfway through (stirring up and basting the butter sauce as well). I gave a quick broil at the end just to crisp up the bacon a bit… no one likes soggy bacon!
PS: I’ve upped my game slightly.
I bit the bullet and bought a decent tripod! I knew it would make a huge difference because my lighting situation is far from ideal, so I’ve had to shoot on a ridiculously high ISO (hence the blurry pictures). While I am still very much a photography noob, this is a big step forward and now I can try to teach myself about proper lighting.
