Between a new job, Christmas shopping, birthday events, the new star wars game, and my desire to sleep… I have not been able to find the time to post anything. Fortunately for me, I have still been cooking on occasion (and taking pictures), so I have a nice supply of recipes to post from the weeks past.
Now that the birthdays/holidays are over, I’ve settled into my new working schedule, and I don’t feel the need to spend all of my free time playing a game… I’m hoping to get back into the things I was doing so well before (gym, cooking, and sleeping). My goal is to keep a collection of posts in a buffer, so in case I find myself oddly busy again I won’t fall behind on this site.
On to the fish!
If you’re a seafood fan, this meal is amazing… healthy, fast, and cheap… win/win/win. I used cod because it was the cheapest white fish at the seafood counter, no reason to go fancy with fish for tacos.
I got the fish prepped and set the oven to broil (it was too cold outside to grill). Both sides of the fish got some salt, pepper, and a liberal amount of red pepper powder. Once the oven was fully heated, I threw the fish on a lightly oiled pan with aluminum foil.
When the fish was cooking I got to work on the sauce… it was a simple mixture of half plain yogurt/half miracle whip (plus some herbs and seasonings).
I wasn’t ready for the fish to cook as fast as it did… it was done in about 8 minutes. I had to pull the fish out and get to work on heating the tortillas. I attempted to warm them up on the stove but that was taking forever… I quickly gave up and went for the wet paper towel/microwave tactic.
Warm tortilla + coleslaw mix (minus the packaged dressing) + sauce + fish = amazing, fairly healthy, fish taco. The best part about fish is that it doesn’t last in the fridge… a great excuse to eat 4 to 5 of these tacos… must not waste food!
I got distracted more than usual while writing this short post. At about paragraph 2 I needed some audio entertainment… so I went to Youtube and got stuck following a chain of gameshow fails: Price is Right, Who Wants to be a Millionaire, and some more Price is Right.
That was followed by my new favorite internet addiction: Canvas Rider.
Lastly, Ellie Goulding’s Lights (Bassnectar Remix) provided me with the ear pleasure I needed to finish up… I listened to that about 8 times in a row.
Can a fish taco taste good if the fish isn’t deep fried in beer batter? You bet it can… just load it up with seasoning and a creamy sauce! Don’t worry, the sauce isn’t that bad for you either.
