I’m a huge fan of all things breakfast… unfortunately I am not the kind of person that likes to eat during those morning hours, I just am not hungry until lunch (at the earliest). So, I could (and do) go weeks without eating a breakfast-like meal… which is a shame, and something I need to change.
So, in an effort to bring breakfast back into my life (and to try and even out my posts a little) I have attempted to make huevos rancheros… something I have never once eaten. With that in mind, I can not vouch for the authenticity of this recipe… but I can vouch for the simplicity and excellence.
I chopped up half an onion and a hot green pepper and sauteed that in a small sauce pan for a bit until they were a little cooked, then I added the diced tomatoes, salt, and a little pepper and let that simmer while I did the rest.
The tortillas were heated in a skillet and then I threw them in the oven at 200ºF to keep warm while I cooked the eggs. The eggs themselves were just a quick fry, sunny side up.
Warm tortilla, topped with egg, topped with salsa, then topped with cheese.
I like some heat, so I went with hot green peppers and the jalepeno version of the diced tomatoes… which may have been overkill since my mouth has been on fire for the last 2 hours (my nose is also on fire because I had an itch while cooking and am an idiot).
Fried eggs on a tortilla topped with a spicy salsa… a healthy breakfast with a little kick. This is one of the few ways I can eat vegetables during the morning hours.
