I have to apologize for the lack of posts. It really has been my intention to post multiple times this week… and I have researched, scheduled, and prepared slow-carb friendly meals specifically to throw up on this site. Unfortunately, when you mix a general lack of culinary skills with horrible recipes you get awful tasting food, and I will not be posting about awful food (except for my personal failures).
This recipe, on the other hand, was a huge success (especially when you consider my background of avoiding pork chops). I was kind of looking to see if I could make a pork chop that I didn’t hate… and while this wasn’t the best thing ever, I will be keeping this in my arsenal in case I happen to stumble upon another instance of dirt cheap pork chops in the grocery store.
I’ll let you in on a little secret: I am not a huge fan of mushrooms either. I will eat them when they are included in a meal, but I will not go out of my way to devour them. With that in mind, I decided to enhance this recipe with the addition of some bacon (of the turkey variety… which is surprisingly good (not great)).
Oddly enough, mixing two things I don’t really care for together turned itself into one decent meal… I guess that’s the Mathematics major in me that’s trying to multiply two negatives to get a positive.
Somehow, it worked.
