Sometimes you just want to cook a great meal without doing any real work. Ok… I wouldn’t mind cooking like that EVERY time. Unfortunately that is a rarity, unless you make some roasted chicken with assorted vegetables every night.
This meal cooks itself to perfection, and anything that allows me to browse the internet for an hour… I mean… be productive for an hour, is a win in my book. On top of that, chicken breasts with the bones are often on sale because people are lazy (even lazier than me).
Get those veggies chopped quick so you can go back to being lazy… potatoes, carrots, (celery, rutabaga,) and onions.
I arranged them in a shallow roasting pan and placed the chicken on top. Lightly coated everything with olive oil, salt, and pepper then covered it with foil and started the bake. After a while I removed everything, redistributed the juices, added some herbs, then threw it back in uncovered for the rest of the bake session.
Take it out when the veggies are nice and tender and the chicken is browned.
Roasted chicken and vegetables, it tastes like you put in an hours worth of work but really didn’t have to do anything… my favorite type of cooking.
