When it comes to dieting, tacos are my downfall. I’ll sit down for dinner with the best of intentions, but before I know it, I’ve devoured six tacos and my plate looks like a crime scene.
You heard that right… I am a taco murderer… and I do not discriminate. Fish, chicken, beef, and whatever they put inside those delicious creations they make at taco bell, I have yet to meet a taco that I have not devoured en masse.
Today’s victim: Slow Cooker Pineapple Chicken Tacos
One of my favorite ways of preparing a meal… the slow cooker (I like to call it efficient cooking and not lazy cooking). The only downside is that I have one of those decent, but not great, slow cookers that only have three heat options (warm, low, and high) so you do have to play the timing game.
Should I put it on low before I go to work? Nope, that would be too long.
Should I put it on high right when I get home? Probably, but that means I’ll be eating at 8pm.
I’d rather eat at 8pm than eat dried out chicken. The last thing you want is dry chicken to go with the amazing salsa you made.
Tortillas, shredded chicken, lettuce, salsa, and cheese… add some hot sauce and we are golden (I can’t believe I forgot to drizzle on some sriracha before snapping these pictures).
Now that I have tacos on the brain, that new Diablo sauce that Taco Bell has is pretty damn good. I think I know what I’m getting for lunch.
