Brinner is awesome.
I actually never eat breakfast during the breakfast hours. I’m one of those people that does not get hungry until lunch time… food early in the morning just doesn’t work with me. On the plus side, less daily calories. On the negative side, I miss out on the awesome variety of breakfast goodies… pancakes, waffles, corned beef hash, eggs benedict, and my all time favorite: french toast.
Here’s a way to take the great french toast and kick it up to a heavenly status.
I took the cream cheese out of the fridge well beforehand to make sure it was softened up to make it easy to mix with the jam… then I mixed it with the jam. I also chopped up some strawberries and added them to the mix.
I made a slit in the bread along one of the corners… just big enough for a spoon to fit in. I then shoved a knife in there and made sure there was a pocket all the way through the bread. It was kind of a pain to get the first few spoonfuls into the bread, but once the whole opened up a little more it made it go smoother.
Once I had them all stuffed, I made a standard egg/milk/cinnamon french toast bath and soaked these bad boys until max absorption was reached. I threw em on the pan over medium low heat, cooked, flipped, cooked then ate.
French toast stuffed with cream cheese and as much fruit as you can afford.
