Back in the day, whenever I ordered a pizza from this one place in town I had to get an order of jalapeno poppers as well. The cheese filled, spicy, fried little buggers were just the perfect blend of mouth-watering awesome. Now that I’m flexing my culinary muscles, I want to make (and eat) them by the dozen, but I am still holding strong in my fight against fried food (oil is expensive).
Instead, I found something that might fill that void in my life… jalapenos stuffed with a three cheese blend and baked.
Grab yourself a sharp knife and a spoon. If you have a grapefruit spoon that will save you some time gouging out the insides of these things… if not, you’re in the same boat as I was and you can struggle a little bit more.
Don’t forget to wash your hands (many times) after dealing with these peppers. You also don’t want to do something stupid like touch your eye during this process (whoops).
I filled my peppers with 1/2 ricotta and 1/2 cream cheese (with some minced onion and garlic mixed in). There are many herbs and spices that could play well with this type of appetizer so feel free to mix and match with whatever you have available.
I topped them with some shredded cheddar and threw them in the oven until the cheese started to brown and the peppers were cooked (about 25 minutes). If I was doing this again (which I will), I would have bought twice as many peppers and made a boat instead of just cutting them in half… more filling!
I was going to pretend like I made these for the Super Bowl… but in reality, I worked right up until kick off. I got home just in time for the game AND all of the food was ready and waiting for my arrival.
