Tacos are a staple in my diet. They are one of a few meals that I can eat weekly with no fear of ever growing sick of them. Having to pass on tacos because of this diet has not been easy… but then I realized that tacos were only a no-go because of the shell. Throw the insides in a huge bowl, grab a fork, top it with salsa and a smidge of sour cream, and go to town!
I find this to be a worthy replacement to my former lover… at least for the next 3 weeks while I continue my Slow-Carb life.
I’m a huge fan of jalapeno peppers (and all of their small cousins). They are about ~$1.50 per pound at the grocery store, but you only need one or two (about 20 cents) to feel the heat. I’ve been throwing them into the mix anytime I think it would even remotely taste good.
I spent a bit more than I would have liked on this meal (about $9), but I got about 4 full meals out of it. All things considered, I can’t feel bad about spending $2.50 fill me up completely… I also have about 3/4 of a jar of salsa left that I have to find a use for.
Tacos without the shell… if you’re looking for a way to save yourself some unnecessary calories (or trying to follow a low carb diet) try this one out!
