I’m not so sure how this recipe made it this long without being posted. Chicken stir fry is a staple of my work-week diet for the simple fact that I can make a huge batch and divvy it up into little containers to bring to work… not to mention this is healthy and ridiculously easy.

You really can’t go wrong when you’re buying ingredients, just snag the cheapest veggies you think will work (my trio almost always consists of broccoli, onions, and green peppers).

I’ve been eating like crap this last week or so… mostly out of laziness. I just haven’t been able to talk myself into making food in the few hours of free time I have everyday. It’s now time to get back on a respectable diet and the best way to do that is to make sure that everything I eat is something I’ve made. It’s just a lot easier to monitor what I’m eating when I know what IT is.

No more slow-carb (although it works), I’m just going to eat properly and exercise more frequently. Starting off with something you wouldn’t associate with healthy.. the Sloppy Joe.

Chili has become a savior in my Slow-Carb experiment. It is just too easy to make a HUGE batch of this stuff to fill the voids where I don’t have the time to cook a quality meal (or when I get hungry and need a small snack).

Fortunately, the Memorial Day buyers at Hannaford sucked at their job this year and bought way too much Angus ground beef… it was on a ridiculous sale ($2 per pound) and I snagged the biggest package they had. In hindsight, I definitely should have bought a few more to throw in the freezer… but after I finish this giant pot of chili, I may not feel like eating ground beef for a while.

Disclaimer: I am a bean hater… if you like beans feel free to add them.

I have to apologize for the lack of posts. It really has been my intention to post multiple times this week… and I have researched, scheduled, and prepared slow-carb friendly meals specifically to throw up on this site. Unfortunately, when you mix a general lack of culinary skills with horrible recipes you get awful tasting food, and I will not be posting about awful food (except for my personal failures).

This recipe, on the other hand, was a huge success (especially when you consider my background of avoiding pork chops). I was kind of looking to see if I could make a pork chop that I didn’t hate… and while this wasn’t the best thing ever, I will be keeping this in my arsenal in case I happen to stumble upon another instance of dirt cheap pork chops in the grocery store.

During my struggles to learn how to cook, I realized that I have been neglected one important cooking method… The Grill.

I’ve always left the grilling to those with more experience, so up until now I’ve probably accumulated about 10 man hours of experience with this grill contraption. I’ve (fortunately) gained enough experience to feel comfortable that I won’t cause an explosion when I click the ignite button… as for the actual cooking, my comfort level with the grill is non-existant.

This is the year of change, and it all starts with a burger and some onions.
